The most prominent feature of Miyazaki beef is its quality of texture and marbling. Its lean meat is tight and smooth, and the fine marbling provides rich flavor and aroma. Miyazaki prefecture has many livestock farmers following to Hokkaido and Kagoshima prefecture. In the beginning, producing calves was flourishing by utilizing the vast rich land. Therefore , branded beef ranchers all over Japan such as Matsusaka purchased Miyazaki beef cattle as original calves. These good quality calves which were then passed down the ages, are fed in Miyazaki prefecture, and Miyazaki beef has a good texture because of this. Basically a lot of work goes into this cut.... its honestly amazing.
