The tenderloin is just that, extremely tender. Along with tenderness, our Carrara fullblood tenderloins create a rich creaminess with their webbing of decadent marbling that yields an unmatched flavor. We hand cut our filets and you can cut them with a butterknife.
We recommend grilling, pan sear or sous vide (reverse sear) as ways to cook your filet mignon. Medium rare is the best way to enjoy this tender and flavorful piece of beef.
Our 640 Carrara beef is award winning (Gold Medal at the 2019 Queensland Food & Wine Show) and dedicated to the magic of marbling with a score of 6/7. The flavor and marbling is created with a minimum of 350 day grain feed only using F1/F2 Wagyu registered sires’.
