Top Sirloin Cap, Coulotte, Rump Cap…A beef of many names that translates to only one thing. Great taste. A favorite of Brazil for many years, this cut of meat has made its way into the hearts of the Americas as well. This meat loves to be over an open flame of charcoal or wood but does very well with any method you may prefer. We prefer it to be medium rare to medium.
Our 640 Carrara beef is award winning (Gold Medal at the 2019 Queensland Food & Wine Show) and dedicated to the magic of marbling with a score of 8/9. The flavor and marbling is created with a minimum of 350 day grain feed only using F1/F2 wagyu registered sires’.
