Veal Cutlets are well known as Veal Scallopini or "Scaloppine". Veal comes from young bovine animals aged 6 to 7 months which translate in more tender meat. It literally means a "small piece of meat", but there's nothing small in our Veal Cutlets. Especially thinly sliced, these cutlets are delicious for a Veal Scaloppine Piccata paired with a fresh arugula salad. At Rare Cuts, we predominantly source our beef from Colorado and Nebraska, where the cold weather attracts some of the best-quality English and continental breeds, such as Angus, Hereford and Limosime.
